Chun Mee Chun Mee, known as "Precious Eyebrow" or “Old Man’s Eyebrow” tea, is a very popular Chinese green, available in many different grades. While common varieties can be fairly uninteresting, the higher grades have a wonderful, distinctive plum-like flavor . Genmai Cha aka "Popcorn" This is a specialty Japanese green tea that is blended with fire-toasted rice. A good grade Japan Sencha is blended with the toasted rice. The fresh vegetative character of the green tea is imparted on the cup but it is tempered with the bakey-like character of the rice. There is a natural sweetness and almost chewy character to the finish of this tea. During the firing of the rice, it is not uncommon for rice to "pop" not unlike popcorn, hence the nickname.

Hoji Cha Roasted green tea with full-bodied character and cinnamon-like toast notes. The tea is produced using a 3rd flush Bancha leaf known in Japanese as Sanbancha. The plucked leaves are produced in a style similar to that of Sencha - the leaves are steamed and dried. Next the dried leaf is roasted over a low heat - the low roasting temperature imparts a sweet taste and nice fresh aroma.
Kokei Cha Kokeicha is a unique Japanese green tea. Constant length, pine needle-like leaves with a soft, aromatic typical green tea taste. Kokeicha begins as a paste of Matcha and water which is then extruded through tiny holes to make long, spaghetti-like strings. This pale yellow tea is known for its vegetal quality.
Sencha Japan produces some of the best green teas in the world. The primary producing area in Japan is the Shizuoka prefecture, which is west south west of Tokyo. Japan only exports about 1-2 percent of its total production. Over half of the yearly production of Japanese tea comes from Shizuoka.
